Adowè (Mashed Beans)

Ingredients:

1kg white beans (eg black-eyed peas)

Method:

Thoroughly wash the beans, place in a large bowl, cover with plenty of water and set aside to soak over night. The following day, drain the beans, pour over fresh water and set aside to soak for a further 24 hours.

After this time, wash the beans and replace the water then rub the beans between your hands to remove all the skins. Wash the bans again and the skins should float away. Turn the beans into a pan, just cover with water then bring to a boil, cover with a lid and simmer gently until the beans are completely dry and completely tender (about 90 minutes).

After this time, mash the beans with the back of a spatula until smooth. Serve hot as an accompaniment.
