Acelgas con Jamón (Ham with Chard): A Spanish recipe for an accompaniment of ham and pine nuts stir-fried with blanched chard leaves.

Ingredients


500g chard
1 tbsp olive oil
2 garlic cloves, peeled and sliced thinly
50g ham, chopped
25g pine nuts

Method:

Bring a pan of water to a boil. Clean the greens, remove the midrib and cut the green parts into 2cm pieces.

As soon as the water begins to boil, add the chard greens and boil briskly over high heat for 5 minutes. Drain in a colander and sit aside.

Heat the oil in a large non-stick frying pan over low heat. Add the garlic slices and fry for a few minutes. As soon as the garlic begins to brown add the ham and pine nuts. Toast lightly for 1 minute then stir in the drained chard.

Fry for a couple of minutes, then serve immediately.
