Translation


Gruel of almonds



Take blanched almonds and pound them with oatmeal. Boil with water, add saffron and salt.

Modern Redaction


Essentially this is porridge, but made with almond milk

Ingredients:

200g ground almonds
100g fine oatmeal
600ml water
pinch of saffron
salt to taste


Method:

Pound together the almonds and oatmeal in a mortar until very fine. Turn into a pan, add the water and bring to a simmer. Continue cooking until the mixture has a thick, porridge-like consistency.

Crumble in the saffron and stir to colour the gruel. Season to taste with salt, turn into a serving dish and bring to the table.
