Galyntyne

(from A Forme of Cury)



Galyntyne. Take crustes of brede and grynde hem smale. Do þerto powdour of galyngale, of canel, of gyngyuer, and salt it; tempre it vp with vyneger, and drawe it vp þurgh a straynour, & messe it forth.



Translation:
Galantine. Take crusts of bread and grind them small. Add powder of galingale, of cinnamon, of ginger, and salt it; mix it with vinegar, and pass it through a strainer, & serve it.

Modern Redaction

Ingredients:

235ml Red Wine Vinegar
235ml Dry Red Wine
225g Breadcrumbs (approx)
1½ tsp Cinnamon
1½ tsp ginger
1½ tsp galingale
Salt to taste

Method:

Whisk together the wine, vinegar, and spices, add enough of the breadcrumbs to make a smooth, slightly thick sauce. Adjust the seasoning to taste.

If the sauce is lumpy pass it through a sieve or use a blender.

Serve at room temperature as an accompaniment to fish, poultry, and roast meats.
