Take Funges and pare hem clere and dyce hem. take leke and ſhred hym ſmall and do hȳ to ſeeþ in gode broth. color it with ſafron and to þ9 inne powdō fort.
Modern Redaction
Ingredients:
900ml beef broth
250g sliced mushrooms (a mix of button, shiitake and chestnut yield good flavour and texture)
2 medium leeks thinly sliced
½ tsp powder fort
2 saffron threads ground into 1 tbsp water in a pestle and mortar and allowed to steep.
Method:
Add the mushrooms and leeks in a pot together with the broth and bring to a boil. Reduce to a simmer and add the spices and saffron. Cook for about 20 minutes, until the mushrooms and leeks are tender. Drain and serve immediately.
