Apple Muse.—Take Appelys an sethe hem, an Serge hem þorwe a Sefe in-to a potte; þanne take Almaunde Mylke & Hony, an caste þer-to, an gratid Brede, Safroun, Saunderys, & Salt a lytil, & caste all in þe potte & lete hem sethe; & loke þat þou stere it wyl, & serue it forth.
Translation
Take apples an boil them, and pass it through a strainer into a pot; than take almond milk & honey, and add, and grated bread, saffron, sandalwood, & a little salt, & put all in a pot & let it boil; & see that you stir it well, & serve it forth.
Modern Redaction
Ingredients:
8 apples, peeled and cored
400ml Almond milk
50ml honey
200g unseasoned breadcrumbs
6 saffron threads
1/2 tsp red food colouring
pinch of salt
Method:
Boil the apples until very soft, then drain. Mash them until completely smooth then place in a clean pot and blend-in the almond milk, honey, saffron, breadcrumbs, saffron and food colouring. Cook on a low heat, stirring occasionally, until the potage is completely hot and has thickened to the desired consistency.
