This is the classic instant vanilla pudding as found throughout Europe. The quantities are enough for 1 jar, a total of 20-25 servings. The recipe to prepare the pudding is found at the end.
Ingredients:
200g (1 cup) granulated sugar
95g (¾ cup) cornflour (cornstarch)
95g (¾ cup) dry milk powder
1 tsp sea salt
2 whole vanilla pods (beans)
Method:
Whisk together the sugar, cornflour, milk powder and salt in a bowl. Set aside.
Split open the vanilla pods and use the blade of a knife to scrape out the seeds. Cut the remaining pods into three pieces each.
Mix the seeds into the sugar blend. Place a few of the pod pieces in the base of a jar then add in 1/3 of the sugar mixture. Top with more of the vanilla pod pieces followed by half the remaining sugar mixture. Top with the remaining vanilla pod pieces and then the remaining sugar mix.
Seal the jar and shake to distribute the vanilla pieces evenly.
To make a pudding, combine 500ml (2 cups) milk with 60g (1/2 cup) of the pudding mix. Whisk to combine then bring to a boil. Immediately reduce the heat to a simmer and cook, whisking constantly, for about 3-5 minutes until the pudding thickens enough to coat the back of a spoon. Take off the heat and allow to cool for 5 minutes before serving.
Any leftovers can be stored in an air-tight container in the refrigerator.
