English Translation

This is a modern recipe that sill uses traditional ingredients. It adapts a traditional breakfast to form fishcakes made from potatoes, flour and oatmeal that incorporate cockles and laverbread as flavourings.

Ingredients:

115g (1/4 lb) Cooked potatoes
25g Plain flour
25g Fine oatmeal
1 Medium egg, beaten
1 tsp Finely chopped parsley
Halen Mon Sea Salt and black Pepper
55g Laverbread
55g Cockle meats
Olive Oil

Method:

Mash the cooked potatoes and mix in the flour and oatmeal. Add eggs, herbs, Sea Salt, pepper, Laverbread and Cockles and mix well.

With floured hands shape the mixture into small flat patties. Heat a little Olive Oil in a non-stick frying pan, add the patties in batches and cook for 1-2 minutes on each side until crisp and golden brown.

Delicious when served with roasted tomatoes and Smoked Bacon.
