Ingredients:

50g butter
175g dark chocolate
80g sweet, plain biscuits, broken into crumbs
2 tbsp glacé cherries, finely chopped
2 tbsp hazelnuts, finely chopped
2 tbsp almonds, finely chopped
2 tbsp raisins
1 tbsp rum (or brandy)
a few drops of vanilla extract
2 tbsp double cream
finely-chopped nuts or vermicelli broken into small pieces, to coat

Method:

Combine the chocolate and butter in a bain-marie (double boiler), mixing gently until the ingredients have dissolved completely and combined together.

In the meantime, combine the biscuit crumbs, cherries, nuts, the raisins and the rum (or brandy) in a bowl and mix thoroughly. When the chocolate mix has melted, take off the heat and beat with the cream to combine. Pour this into the biscuit, nut and rum mixture. Mix thoroughly then transfer to the refrigerator and chill for 30 minutes.

After this time, remove from the refrigerator and shape the mix into 40 small balls. Roll these in the finely-chopped nuts or the vermicelli pieces, ensuring they are evenly coated.

These can be served as they are, but if you are going to make them into a Christmas gift, place each ball in a small paper case and arrange in a box before decorating with wrapping paper and a ribbon.
