Ingredients:
450g potatoes, peeled and finely diced
1l strong vegetable stock
2 bunches of watercress
1 buquet garni
salt, black pepper and nutmeg, to taste
a little cream to decorate
Method:
Chop the watercress finely then add to a pan along with all the remaining ingredients (except the cream). Season with salt, black pepper and nutmeg then bring the mixture to a boil. Reduce to a boil and cook for 30 minutes. Remove the bouquet garni at this point an allow the soup to cool a little before liquidizing in a food processor. Return the soup to the pan and allow to warm through.
Serve in warmed soup bowls, garnished with a swirl of cream.
