Ingredients:

225g butter, melted
450g self-raising flour
225g sugar
4 eggs
250ml milk
350g mixed fruit

Method:

Combine all the ingredients in a bowl and mix thoroughly. Transfer the batter to a 1.5kg loaf tin that's been buttered and floured. Place in an oven pre-heated to 150°C. Bake for about 100 minutes, or until a skewer inserted into the centre of the cake emerges cleanly.

Set aside to cool in the tin for about 5 minutes then transfer the cake to a wire rack to cool completely before serving.
