Ingredients:
140g currants
2 eggs, beaten
140g sultanas
pinch of salt
240ml water
300g self-raising flour
100g sour cherries (or other cherries)
Method:
Combine the fruit, sugar and the water in a saucepan. Bring the mixture to a boil then take off the heat and set aside to cool.
When the mixture is cold tip into a bowl and add the flour and the eggs. Beat thoroughly then transfer to cake tin that's been greased and floured. Place the cake in an oven pre-heated to 180°C an bake for about 90 minutes, or until a skewer inserted into the centre of the cake emerges cleanly.
Set aside to cool in the tin for about 5 minutes then transfer the cake to a wire rack to cool completely before serving.
