Ingredients:

450g flour
a pinch each of salt and grated nutmeg
1 dessert spoon of baking powder
120g butter
120g sugar
60g currants
142ml milk
2 eggs
caster sugar to scatter

Method:

Sift the flour, baking powder, salt, nutmeg and sugar into a bowl. Add the butter and rub into the flour until the mixture resembles fine breadcrumbs. Add the currants and stir then beat together the milk and eggs before adding to the flour mixture.

Bring the mixture together as a dough and turn out onto a floured surface. Knead gently then roll out to about 1.5cm thick and cut into circles about 5cm in diameter with a pastry cutter. Dust both sides with caster sugar then transfer to a baking tray that's been well greased.

Transfer to an oven pre-heated to 180°C and bake for about 10 to 15 minutes, or until the tops of the cakes are golden. Serve warm with butter and jam.
