Ingredients:
225g runny Honey
350g Porridge Oats
225g Butter
Pinch of Sea salt
Method:
Place the butter in a medium-sized saucepan and set over medium heat. Once the butter has melted stir in the salt, honey and oats. Mix well to combine then take off the heat and set aside to cool.
When the mixture has cooled to room temperature take handfuls, roll into balls then flatten down into cakes. Continue until all the mixture has been shaped.
To cook, heat butter in a large non-stick frying pan. Once the butter is foaming, carefully nestle the cakes into the pan (don't over crow, you can always cook in batches).
Fry lightly on both sides until golden brown (but take care they don't burn).
Turn out onto a plate, allow to cool slightly and serve warm.
