Grenadan Dumplings

Grenadan Dumplings is a traditional Grenadan (from the Island of Grenada) recipe for a classic dumpling of flour, salt, baking powder and water flavoured with nutmeg that is a classic addition to most stews and curries. Also known as domplin or domplines these are the Grenadan version of the flour, salt and water dumplings found throughout the Caribbean. Of course, in Grenada they're flavoured with grated nutmeg!

Ingredients:

180g of plain (all purpose) flour (Or a combination of: 120g of wheat flour and 40g of cornmeal)
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp freshly-grated nutmeg
180ml of water

Method:

Blend together the flour, salt, nutmeg and baking powder in a bowl. Add the water a little at a time and blend into the flour to form a dough. This dough should be very firm; not sticky or too soft. You may need to add additional spoonfuls of flour or water if needed to attain the correct consistency.

The dough is ready when the mixture forms a ball and the sides of the bowl are clean. Let the dough rest for about 5 minutes, covered with a damp cloth, then divide into 8 pieces. Shape these into little balls or sausage shapes (depending on preference).

Bring 2l water to a boil in a large pan. Add 2 tsp salt, 1 finely-grated garlic clove and 1 tsp oil. Drop the dumplings carefully into the boiling water and after a few minutes they will float to the top. Stir them around and push them down a few times to make sure all sides are cooked. They should be fully done in 10 to 12 minutes.
